Diane Kittle (Dee, the One Smart Cookie!) went through her life frequently ill and many times in debilitating pain. Poked, prodded and several misdiagnoses later, she finally found out what was causing her ailments….an acute reaction to gluten, celiac disease.
Kittle was making progress by putting herself on a microbiotic diet, but slipped back into old eating habits and quickly her symptoms reappeared. After the untimely death of her husband she made serious life changes including leaving her corporate position to follow her interest in baking, working for a nationally known cake designer. Being exposed to flour every day, she started suffering from increased symptoms and pain, and it wasn’t until after consulting a naturopath doctor and completing an elimination diet that she was given the diagnosis of celiac disease.
This was the beginning of a new chapter in Kittle’s life, Dee’s One Smart Cookie was born! Using her love of baking and experimenting with gluten free recipes, she converted her favorite traditional recipes using organic and natural ingredients into booming business, Dee’s One Smart Cookie in Glastonbury, CT.

Dee’s One Smart Cookie is a bakery dedicated to creating fresh baked goods for people living with sensitivities to wheat, gluten, dairy, soy, peanuts and many other food allergens. Dee opened the doors of her gluten-free, dairy-free bakery in Glastonbury, Connecticut, November 4, 2008.
Diane, “Dee”, Kittle was an accomplished pastry chef and sugar artist when she was diagnosed with celiac disease, a severe auto-immune reaction to gluten. Realizing that she could no longer work in conventional pastry arts, she took on the task of developing a repertoire of delicious gluten and dairy free recipes. In the process, she learned from her “tasters” that other allergens were affecting their lives. She emerged from her kitchen ready to share her work with the gluten/dairy/allergen free community.
